  • Prep: 10 mins
  • Cook: 45 mins
  • Yields: 4 Servings

4 Chicken breasts (boneless and skinless, pounded thin)

5 oz. Baby spinach ( 1 package)

1/4 cup Greek yogurt, plain.

1/4 cup Cream cheese

1/4 cup crumbled feta

1 tbsp It’s All Greek to Me! Salt Free Seasoning

1 egg (large, lightly beaten)

1 tbsp Water

1/4 cup plain bread crumbs

1 tbsp It’s All Greek to Me! Salt Free Seasoning

1Pre-heat oven to 350 degrees.

2In a large skillet, over medium heat, sauté garlic and spinach until wilted.

3Reduce heat to low and stir in the Greek yogurt, cream cheese, feta, and 1 tablespoon It’s All Greek to Me! seasoning. Stir until cheese is melted and ingredients are combined. Remove from heat and allow to cool slightly.

4Divide spinach mixture among the four chicken breasts, spreading the mixture on top of the chicken and then rolling up. Secure with a toothpick to keep from unrolling.

5Whisk together the egg and water in a small bowl.

6In a shallow dish, combine the bread crumbs and It’s All Greek to Me! Salt Free Seasoning.

7Dip each chicken breast into the egg wash and then the breadcrumbs.

8Place on a baking sheet coated with non-stick spray and bake for 40 minutes or until chicken is through.

Tip: Serve alongside a Greek salad for a healthy, low-carb dinner.
