This recipe is so simple and takes hardly any time at all. An easy go to dish that is nice when served with salad, quinoa, rice, or any veggies. Packs a perfect flavor punch! This is a great option for a different meal. Opt for salmon instead of beef or chicken for your next burger fare!

Caribbean flavor by Caribbean Citrus Salt Free Seasoning Blend available through Do You Bake?

Ingredients

10 oz. Salmon (can, pouch or 1 cup of leftover salmon filet, flaked with fork)

2 tbsp Coconut oil

1 cup Pineapple (14oz can) crushed, drained

1 Yellow onion (small, diced)

1 Red bell pepper (diced)

1 Garlic (1 clove, minced)

1 1/2 tbsp Caribbean Citrus Salt Free Seasoning Blend

2 eggs (lightly beaten)

1 1/2 cups Panko bread crumbs

2 tbsp olive oil

Directions

1In a large skillet, sauté the crushed pineapple, onion, pepper, garlic, and Do You Bake? Caribbean Citrus Salt Free Seasoning Blend in the coconut oil until the vegetables are tender. Cool to room temperature.

2In a large bowl, combine the salmon, eggs, bread crumbs, and vegetable mixture. Mix until well combined and refrigerate at least 30 minutes.

3Form mixture into 6 patties.

4Heat the olive oil in a large non-stick skillet and cook the patties for 3-4 minutes on each side, until golden brown.

You can easily turn these puppies into perfect grilled patties! Just make sure your grill is super duper greased with a little olive oil before grilling! Grill for 2 minutes on each side.

Tip: Serve with brown rice and vegetable of choice for a balanced meal.
