

Apple Blueberry Pancake Cobbler

Turn your buttermilk pancake mix into a show-stopping, comforting fruit dessert. Make this berry and apple crumble using only a few simple ingredients most of us have on hand. Dessert doesn't have to be complicated. But oh my it can be delicious! Who would have thought, Pancakes for dessert!

Ingredients
About 3 cups of fruit (we have used 2 granny smith apples peeled, cored and sliced alongside 2 cups of frozen blueberries)
1/2 cup Do You Bake? Buttermilk Pancake Mix
2/3 cup of Oats or Do You Bake? Vanilla Superfood Blend (or 2 packages of Crave It Berry, Chia and Oats Mix)
3/4 cup brown sugar (if using Crave It Oats Mix, reduce sugar to 1/3 cup)
Directions
1Preheat oven to 375F
2Spray the bottom of your skillet, pan or casserole dish with cooking spray or lightly butter (9x11 pan)
3Peel and slice apples.
4Place them at the bottom of your slow cooker.
5Top with your blueberries
6In a bowl, add the pancake mix, oats, sugar, salt and stir to combine
7Add your melted butter and with two forks blend into the mix until a soft crumble forms
8Top your berries with your crumble
9Bake for 30 - 40 minutes until crumble is cooked and berries / apples are bubbly underneath
10Serve with ice cream!
